Deep Fried Coconut Pike
This easy to make recipe is the perfect summertime lunch. Halibut, perch, and most other fish are good substitutes.
Ingredients
- 1 cup pancake mix
- 3/4 cup flaked coconut
- 2 pounds of pike fillets (cut into 2 inch pieces)
- Canola oil
Directions
Prepare pancake mix according to package directions and stir in the flaked coconut. Dip fish into the batter. When the oil is up to medium temp, add the battered fillets to the oil and cook 3 to 4 minutes on each side until golden brown.
