Cajun Catfish
This is a very tasty recipe featuring multiple layers of Cajun flavor. One of our favorites for catfish fillets, but walleye or pike are great substitutes.
Ingredients
- 1 teaspoon paprika
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon ground pepper
- 1/2 teaspoon onion powder
1/4 cup chopped mild green - 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon garlic powder
- 1/4 teaspoon dried oregano
- 2 tablespoons butter or margarine
- 1 tablespoon olive oil
- 6 catfish fillets
Directions
Mix paprika, cayenne, pepper, black pepper, onion powder, thyme, basil, garlic powder, and oregano together.
Over medium heat, melt butter and oil and use a basting brush to spread the mixture on both sides of the fillets before coating each side with the season mix.
In a hot iron skillet, drizzle the butter-oil mix on one side of a fillet and lay it butter side down. Cook for about 5 minutes before duplicating the process on the other side of the fillet.
